California BLT

Ingredients: almonds, zucchini, tomatoes, lettuce, beets, and date paste

Spices: onion powder, paprika, cayenne pepper, and salt

Instructions:

  1. Juice one beet
  2. Cut zucchini into slices with a knife or peeler
  3. Soak slices in beet juice for 5 minutes
  4. Dry and rub paprika, cayenne pepper and salt to the slices
  5. Deyhdrate (optional)
  6. Blend almonds to create almond flour
  7. In a bowl, mix almond flour, date paste, and onion powder by hand
  8. Shape into a square with mixture by hand or cookie cutter to create the bread
  9. Add bacon, lettuce, tomato, and avocado to the bread

Chocolate Brownies

Ingredients: almonds, date paste, cacao powder, and vanilla bean

Instructions:

  1. Blend almonds to create almond flour
  2. In a bowl, mix almond flour, date paste, cacao powder, and vanilla bean by hand
  3. Mold into a lined, rectangle baking pan
  4. Refrigerate for 30 minutes

Strawberry Shortcake Pops

Ingredients: nuts, dates, strawberries, avocado, coconut oil, shredded coconut, and lollipop sticks 

Instructions:

  1. Blend nuts into flour
  2. Blend dates and coconut oil to make a paste and mix it with the nut flour to create a dough-like texture
  3. Shape into a ball and insert a lollipop stick
  4. Refrigerate for 15 minutes
  5. Blend coconut oil, avocado, and strawberries
  6. Dip the refrigerated pops into the strawberry mixture and coat with shredded coconut
  7. Refrigerate for 15 minutes
  8. Blend coconut oil and strawberries (for color) and drizzle over the pops
  9. Refrigerate 10 minutes

Mint Chocolate Cheesecake

Ingredients: vanilla protein powder, coconut oil, avocado, spinach, mint, cashews, dates, and cacao (or carob) powder

*vanilla protein powder by Sun Warrior

Instructions:

  1. Melt coconut oil at room temperature
  2. Process cashews, dates, cacao powder, and coconut oil 
  3. Mold to the bottom of a lined baking tray or springform pan
  4. Blend coconut oil, water, vanilla protein powder, avocado, dates, spinach, and mint
  5. Pour over crust
  6. Refrigerate for 2-3 hours

Nori Ravioli

Ingredients: nori, chia seeds, any nuts/seeds, garlic, lemon, and olive oil

Spices: onion powder and salt

Instructions:

  1. Cut nori sheets into desired shape (2 sheets = 1 ravioli)
  2. Blend chia seeds and water for the paste 
  3. Process any nuts/seeds with olive oil, lemon, garlic, onion powder, salt, and water for the filling
  4. Place desired amount in the middle of one nori sheet and spread the paste around the rest of the sheet
  5. Mold the second nori sheet on top, concealing the filling

Chia Clam Chowder

Ingredients: nut milk, avocado, chia seeds, onion, celery, zucchini, and thyme

Spices: onion powder, salt, and pepper

Instructions:

  1. Blend avocado and nut milk until desired consistency
  2. Add onion powder, salt, and pepper (blend again)
  3. Cut and dice onion, celery, and zucchini 
  4. Add diced onion, celery, zucchini, and chia seeds to the chowder

Aloe Vera Street Tacos

Ingredients: aloe vera leaf, mushrooms, collard greens, micro greens, cilantro, and onion

Spices: ground chipotle, onion powder, garlic powder, tomato powder, cumin, and salt

Instructions:

  1. Cut collard greens into a circle or use a circle cookie cutter to make the tortillas
  2. Fillet aloe vera leaf and dice the flesh and mushrooms into cubes
  3. Rinse and dry the aloe vera cubes
  4. Season the aloe vera cubes and mushrooms with the spices listed above and add on top of the “tortillas”
  5. Garnish with onion and cilantro

Pizookie

Ingredients: any type of nuts, dates, coconut oil, and raw ice cream*

Instructions:

  1. Melt coconut oil at room temperature
  2. Soak dates for 30 minutes
  3. Blend or process nuts to create flour
  4. Blend coconut oil and dates to create a paste
  5. Mix paste and nut flour by hand
  6. Firmly mold to the bottom of a baking tray
  7. Put raw ice cream on top

Eggplant Parmigiana With Garlic Wheatgrass Pesto

Ingredients: eggplant, kale chips*, walnuts, basil, freeze dried wheatgrass powder, lemon, garlic, olive oil, salt, and water

Instructions:

  1. Cut eggplant into slices
  2. Rub salt onto the eggplant and let it sit for 30 minutes to an hour (to extract water)
  3. Process walnuts and kale chips to create the “bread” crumbs
  4. Rinse and dry eggplant slices
  5. Coat eggplant slices with olive oil and batter it with the bread crumbs
  6. Dehydrate at 105 degrees for 3 hours (optional)
  7. Blend olive oil, lemon juice, walnuts, garlic, and salt for the cheese
  8. Blend oilive oil, freeze dried wheatgrass powder, basil, garlic, and salt for the pesto

Piña Colada Cheesecake

Ingredients: coconut oil, pineapple, baby bananas, and walnuts

Instructions:

  1. Melt coconut oil at room temperature
  2. Blend or process walnuts for 10 seconds
  3. Add coconut oil to the walnuts and blend/process again for 10 seconds
  4. Mold to the bottom of a lined baking tray
  5. Blend coconut oil, pineapple, and baby bananas
  6. Pour over crust and refrigerate for two hours

Crispy Macadamia Fudge Squares

Ingredients: coconut oil, carob/cacao powder, dates, macadamia nuts, and vanilla bean

Instructions:

  1. Soak dates for 30 minutes
  2. Melt coconut at room temperature
  3. Blend or process macadmia nuts with the vanilla bean
  4. Blend some of the macadamia nuts with water to create milk (strained)
  5. Blend dates with a little water to create a paste
  6. Blend coconut oil, carob/cacao powder, date paste, and a little macadamia milk
  7. Pour into a lined baking tray
  8. Add macadamia nuts
  9. Refrigerate for 30-45 minutes

Chewy Cinnamon Roll

Ingredients: pecans, cashews, dates, and coconut oil

Spices: cinnamon

Instructions:

  1. Soak dates for 30 minutes
  2. Melt coconut oil at room temperature
  3. Blend pecans to create the flour
  4. Blend dates with a little water to create a paste
  5. Mix a little of the date paste with the pecan flour to create the dough
  6. Roll out the dough & spread the date paste
  7. Add cinnamon
  8. Roll up the dough & cut into sections
  9. Dehydrate at 105 for one hour (optional)
  10. Blend coconut oil, water, cashews, and date paste for the glaze

Blackberry Macaron

Ingredients: macadamia nuts, dates, young thai coconut meat, and blackberries

Instructions:

  1. Blend macadamia nuts to make the flour
  2. Blend dates, young thai coconut meat, and blackberries into a paste
  3. Mix a little bit of the paste with the macadamia nut flour to make a dough
  4. Cut or mold dough 
  5. Dehydrate at 105 degrees for 2-3 hours

Milk Chocolate

Ingredients: carob/cacao powder, coconut oil, and dates

Instructions:

  1. Soak dates for 30 minutes
  2. Melt coconut oil at room temperature
  3. Blend dates with a little water to create a paste
  4. Blend coconut oil, carob/cacao powder, and date paste
  5. Pour into a chocolate mold or lined baking tray
  6. Refrigerate for 30 minutes

Sweet Potato Pie

Ingredients: sweet potato, pecans, avocado, carrot pulp, dates, coconut oil, and young thai coconut

Spices: cinnamon, nutmeg, and vanilla bean

Instructions:

  1. Blend or process pecans for 10 seconds
  2. Add coconut oil and blend/process for another 10 seconds
  3. Mold to the bottom of a lined baking tray
  4. Juice sweet potato 
  5. Blend sweet potato juice, avocado, carrot pulp, dates, coconut oil, and spices
  6. Pour over crust and refrigerate for two hours
  7. Blend coconut meat and coconut water for the cream

Jalapeno Poppers

Ingredients: jalapenos, pine nuts, almonds, olive oil, garlic, salt, and water

Instructions:

  1. Blend olive oil, lime juice, pine nuts, garlic, water, and salt until thick and creamy
  2. Stuff jalapenos by cutting a slit along the pod and pressing firmly on the pod (like opening a coin purse)
  3. Refrigerate for 30 minutes or until cream thickens inside the pod
  4. Blend almonds to make almond flour
  5. Coat the jalapenos with olive oil and bread them with the almond flour
  6. Dehydrate or refrigerate for 30 minutes (optional)

Kimchi & Pine Nut Cream Cheese Over Crackers

Ingredients: kimchi*, dehydrated crackers*, pine nuts, olive oil, lemon juice, and salt

Instructions:

  1. Blend pine nuts, olive oil, lemon juice, and salt until thick and creamy
  2. Spread “cream cheese” over deyhdrated cracker
  3. Add kimchi

Pumpkin Spice S’mores

Ingredients: coconut oil, carob powder, pecans, young thai coconut, date paste, and vanilla bean

Spices: cinnamon, nutmeg, ginger, cardamom, and all spice 

Instructions: 

  1. Process pecans for 10 seconds
  2. Add coconut oil, date paste, and spices
  3. Process for another 10 seconds
  4. Mold half of the crust to the bottom of a lined baking tray
  5. Blend coconut oil, coconut meat, and vanilla bean until creamy for the marshmallows
  6. Pour over crust and refrigerate for 15 minutes
  7.  Blend coconut oil, carob powder, and date paste for the chocolate
  8. Pour over “marshmallows”  and refrigerate for 20 minutes
  9. Mold the remaining crust on top of the chocolate and refrigerate for 15 minutes

Macaroni & Pepper Jack Cheese

Ingredients: zucchini, olive oil, lemon juice, peppers, walnuts, nutritional yeast, and salt

Instructions:

  1. Peel zucchini using a julienne peeler, then chop “noodles” into sections
  2. Blend olive oil, lemon juice, peppers, walnuts, garlic, nutritional yeast, and salt
  3. Pour over zucchini
  4. Mix in your favorite vegetables

Kiwi Bars

Ingredients: walnuts, cashews, kiwi, avocado, and coconut oil

Instructions:

  1. Process walnuts and cashews for 10 seconds
  2. Add coconut oil to the nuts and process for another 10 seconds
  3. Mold crust to the bottom of a lined baking tray
  4. Process kiwis and avocado for 10 seconds
  5. Add coconut oil to the fruit and process for another 10 seconds
  6. Pour fruit mix on top of the crust
  7. Refrigerate for 2 hours

Fruit Lasagna

Ingredients: mango, strawberries, bananas, and young thai coconuts

Instructions:

  1. Cut mango into thin slices, which will be used as the pasta
  2. Cut bananas and strawberries into thin slices, which will be used to stack the lasagna
  3. Puree strawberries for the “marinara sauce”
  4. Puree coconut meat for the “melted cheese”
  5. Layer

Macadamia Nut Cream

Ingredients: macadamia nuts and young thai coconuts

Instructions:

  1. Blend coconut meat, coconut water, and macadamia nuts until a creamy consistency
  2. *Add coconut water for thinning
  3. *Add coconut meat or macadamia nuts for thickening

Pesto Sauce

Ingredients: olive oil, basil, pine nuts, garlic, and salt

Instructions:

  1. Blend olive oil, basil, pine nuts, garlic, and salt until a creamy consistency
  2. *Add water for thinning

Caesar Dressing

Ingredients: olive oil, lemon juice, garlic, nori, hemp seeds, and salt

Instructions:

  1. Blend olive oil, lemon juice, garlic, nori, hemp seeds, and salt until a creamy consistency
